Does red cabbage have any nutritional value?

I have a steak house close by, the Northwoods Inn, that has the greatest red cabbage salad. I was wondering if red cabbage has any vitamins and minerals in it because I can eat this stuff every day.

Yes . . . much like green cabbage with extra antioxidents (generally found in veggies with "red" color).

Excellent sources of vitamins A and C,as well as calcium and iron . . . Lots of fiber too . . .

Well, it depends on what "dressing" they use . . . a high salt, MSG, hi fat and chemical dressing can "kill" the nutritional value of any vegetable. Also, it depends on "how fresh" is.

Some restaurants use preservatives - especially on "salads" so they look fresh for DAYS.

I make my own cabbage salad & dressing - really simple: cabbage, sweet onions and green onions - mayo, yougurt and (apple cider) vinegar (with lemon juice if the cabbage is a bit "tough"). The "secret" is shreding the cabbage very FINEly. ;)

In fact, I like cabbage so much, I am planting it tomorrow (the garden is READY for the seeds) . . . :)

I can give you an approximation . . . shred 1/4 head of cabbage (2 cups approx shredded finely) . . . chop onion and green onion (depends how much you like onion - I use 2 green onions and 2 or 3 tbsp of round onion) and add to the mix. If the cabbage is tough, drizzle a little lemon juice on it (approx a teaspoon) . . . otherwise use about 1-2 tbsp of vinegar (apple cider is stronger than distilled . . . so use caution) and enough mayonaise to coat the cabbage/onion mix. If you are concerned about calories from fat - substitute lowfat yogurt for about 1/3 of the mayo.

Mix (if you like "sweet" - I don't - add a little honey; and salt and pepper to taste). Hope you like it . . . it is SO easy (I use a 4-sided cheese grater with a "shredder slot" for the cabbage). "Start-to-table" is 5-10 minutes.

Cabbage takes more calories to digest than it adds to your diet. Another plus. Eat all you want.:)

That may be true, but it also contains very valuble vitamins, minerals, trace elements, amino acids and antioxidants.. so it is very worth it.

It actually amazes me that you even need to ask this question.

You should really be asking, "Does a Big Mac have any nutritional value?".

Plant matter is the only thing we can eat that is truely good for you. It is the only thing that contains every vitamin and mineral known to man, in its natural form. Synthetic "replacement" vitamins don't really count. You cannot live on a diet of meat for very long; but you can live a very full and long life on a diet of plant matter.

Even better is if you balance your diet.

I hope it works ok for you . . . LMK, please . . . most dressings for lettuce-based salads don't "work" at all well with cabbage (and I hate the "typical" sweet cole slaws.

You might "experiment" with my basic recipie - substituting unrefined oil for mayo, adding poppy seeds, etc. I actually never "measured" the ingredents and had to "guess" at the proportions of the ingredents while typing it for you (I never do in any of my cooking and it all turns out ok) . . . YMMV. ;) :D

I didn't plant my cabbage seeds today (too cold tonight) . . . so I am planting Romaine, cabbage and an exotic lettuce mix . . . only 2-1/2 months now for a really fresh salad . . . I can't wait . . . :D

I have my own version of Caesar Salad that include Romaine, Baby Romaine, Sunflower Sprouts (I grow myself), green onion as well as Ak-Mak (whole wheat crackers with sesame seeds) instead of croutons. To account for the additons, I use 1/2-balsamic - 1/2 wine vinegar instead of just wine vinegar and the best organic olive oil that is available along with fresh organic garlic, lemon juice and parmesian cheese. No anchovies (or even egg), however. Everyone who has tried it likes it (so far).
