If i run two sticks of 1gb ddr2 in dual channel mode on my board will they run at twice the bit rate but only effectively be 1gb in size. Is it like a raid config where using 2 hds to boost performance keeps the hd size at the size of one HD? Or does the mem run a little faster at 2gb capacity?

There's no RAID level like what you describe. Dual channel still gives you all the RAM capacity, and performs memory operations across both channels in parallel.
