In my Raid 5 NAS server, i have the following drives:

4 X Seagate 7200.10
1 X 10K MAxtor Atlas IV drive
1 X 40 GB Segate 7200.7 drive for OS

How much heat does the drives produce? Especially the seagates?

Four of any drive will produce a fair amount of heat. Just basic airflow will be enough.

I wouldn't put them all on top of eachother unless the bays are well spaced. You will want a fan near them.

I have 6 400GB .10s in the same case. They are mounted sideways on quick rails right under the PS. They are warm but nothing alarming. Its strange becuase when they were spun up out of the case not mounted to anything they were almost too hot to touch.

I am thinking my case acts as a heat sink for them.
