Does cooking oil go bad(rancid)?

I fried up some gyoza with some oil from my pantry...It's one of those big bottles from costco...thinking about it, I think it is 3 years old...:disgust:

me no feel good....seeing double...

anyways, i dont think oil would go bad from sitting in the bottle for years (it doesn't have the things that induce bacterial growth)

as an aside tho, cooking oil goes bad after you use it a few times (not bad, but it gets crappy) because the more times you use it, the lower its' boiling point becomes, and then it doesn't cook food, and bleh.
 
It depends on the oil. I don't have any statistics in front of me, but I think a bottle of olive oil goes rancid in about a month after being opened, or 6 months from the day it was made. Other oils have short lives as well. But if it is just general vegetable oil, you probably will be fine. Smell it - if it smells bad, toss it out. Look at it, if it doesn't look right, toss it out. Taste a drop and see if it tastes rancid. If none of those applies, I'm sure you'll be fine.
