Documents/Desktop on different partition?

So, I reinstalled Windows yesterday, and this time split my hard drive up into partitions. Would I be able to move the desktop, as well as the default "My Documents" (basically, the Documents and Settings) to another partition? Also, would I be able to change the default installation partition? At the time, I'm having to chnage "E" to "C" every time I install something.
