For modern stuff I like Arvo Part's coral music. I don't care much for his symphonic stuff. Otherwise I'm a fan of early music (pre-Baroque, mostly polyphonic).
 
I forgot to mention, I love Earl Wild's interpretations of just about anything. I love how he uses the music as a guideline, not a rule. He, more than almost any other performer, seems to genuinely understand the romantic composers. I love his Rachmaninov. Wow...
 
I like Phantom of the Opera by Webber. Is that technically not classical? Too modern to be classical? It came out in the 1980's so it's less than 40 years old. Also I like some Debussy (Moonlight) and Bach.
