I am a cheese fanatic. Seriously. I love cheese. Any recommendations on stuff that's unique but good?

I love cheese, and my favorite is ricotta...but I'm a health freak, so I hardly ever eat any of it.

Pepper Jack is my favorite, but I also like farmer (goat) and a nice mellow chedder.

Cheddar.

Mild, medium, sharp, extra sharp, white, smoked, curds.. it's all good.

Lord yes. I love pretty much all the standard cheeses, but I cannot eat goat/sheep cheese nor the extremely aromatic varieties (limburger, etc...)

I haven't tried any of the more exotic cheeses so I can only state I love cheddar, pepper jack, mozerella on pizza and swiss and provalone on sandwiches.

Tillamook cheddar!

When I was a kid living in Ind. my grands would send us a block of this every year for Xmas.

We ALWAYS looked forward to that!

I don't know about the availability of it NOW, but back then it was hard to come by unless you lived in Oregon, or at least on the West Coast!

its all good except for the really smelly ones.
