When I'm done grilling, I only don't shut off the burners via the grill controls. With the burners still going, I reach down and close the valve on the propane tank. This lets the propane inside the grill run out and evacuate the lines. Once the flames go out, then I also turn the burner controls to an off position.
I leave it open, at least during the summer. I grill so often it would be a pain to reach underneath and turn it off.

If you're gonna cook with gas, use natural gas. None of that tank refill/exchange BS, just put a gas line in the ground and be done with it.
