Have you ever been driving and looked in the rear view mirror to see gumballs flashing behind you, and fantasized about pushing that accelerator to the floor and giving the copper a little (or long) chase? A game of cat and mouse. The accused trying to slip through the hands of the Man. Hmmm. Flying down the interstate, quick brake, u-turn through the grassy median, fly back up the other direction, swerving through traffic at high speeds. Maybe a little side-swipe action to knock the cop car off the road.
There's good ol' Midtown Madness where the cops chase you around Chicago and sometimes you can get them to crash and lose their wheels. Then you back up and smash into the cop car from the side. BOOM!

Not about running from the police though, mainly it's James Bond-esque fantasies. Running from S.P.E.C.T.R.E. with a double agent in the passenger seat who just happens to be a beautiful woman.
