Now that I know what it is, we cook it Chinese style with hot sauce (and we're talking about some pretty crazy hotness)

I'm only familiar with the tripe in dim sum.

Yes, but only in Cantonese Dim Sum(steamed organ meats from pigs) or deep fried chitlins with plum sauce. I find it delicious! Chinese comfort soul food...
