do those insulated cookie sheets actually do anything?

or is it another marketing gimmick like 9/11, mac, or "green"?

I baked a load of cookies last night, and sure enough in my POS stove in this apartment, the bottoms of every cookie was in varying shades of black/dark brown. would it be worth investing in a couple of these ?

the only batch that came out half decently was the last batch, which I baked for 3 fewer minutes than the recipe called for.

If you mean the ones with a air gap then yea they work. I use to have one beofre we moved and it heated much more evenly as the heat was not hitting the bottom of the pan direct.

I got one for a friend of mine and she said that it never burns anything...I'd do it...I got a new oven in my apartment, so I don't have that problem :D

Like my wife the Master Baker says, you don't bake to time.....


But, yeah they work, especially if your oven has hot spots.

definitely. you have to pay attention when baking

i use half-sheet pans, which are a bit thicker than the non-stick cookie sheets i have so they also heat evenly

Sounds like the cookie sheets work, but thinking beyond cookies...

Do you have an oven thermometer? Calibrating my POS oven settings via a thermometer instead of relying on the numbers on the oven knob has made a big difference for me no matter what I put in there.

Our cheap oven in our apartment is quite a bit off. A decent thermometer is a very good investment.

These pans look interesting though, we might pick up one to give it a try.

I've got some of those and they work well, but I always bake things until they are done, I don't really keep accurate track of time. You could try adjusting the height of your cookies in the oven or as you already did don't cook them so long.

Use a decent heavy duty half sheet pan. I have an insulated pan but I could never figure out the timing with it. Never made anything good on it, now I just use it for preparation. The half sheet pan has not given me any problems.

I mentioned this thread to the Master Baker and she questioned whether your recipe used butter. She said butter will make crispy cookies that are easy to burn. She said switching over to butter flavored Crisco will give a chewier cookie.
