do you mean 2xRCA plugs?? Ifthe RCA is analog than no (there is no point anyway), if the RCA is digital than it IS already s/pdif. If you mean you want to convert from s/pdif coax to optical s/pdif (or vice veria) then you need a conversion adapter (JayCar sells then in Australia)
The only way to get 5.1 out of a s/pdif is if the sound is encoded in Dolby Digital. Generally DD is only used on DVDs as games, mp3, etc output in stero digital.
The SB Live is the only exeption to this as it has twin s/pdif outputs, the 2nd gets used for the rear channel in games (2nd channel is ignored when playing DVDs as it isn't needed).
The upcomming nForce is rummored to have DD encoding inbuilt into the hardware so it will be able to output a 5.1 signal for all applications.
