Do Opterons still only work with ECC memory?

It depends on the platform. Socket 939 Opterons do not require ECC. Socket 940 and Socket F platforms do.
 
Basically, today, all of the single socket Opteron chips (1xx or 12xx) would take non-ECC memory. Any dual or multi-socket chips (2xx, 8xx, 22xx, 82xx) would require not only ECC, but registered DIMMs.
