Do med schools consider your full GPA, or just the courses that "matter"?

They consider everything, and just as much your recommendations from faculty and your interview. That last is very important.

They also break down your gpa into different categories like overall gpa, science gpa, etc

Most of the selections are rigged anyways depending on where you go. Sadly, it's not about just marks, but you need a pretty good gpa. THey make you write essays and they check to see your work experience if any and your volunteer work. ALot of people have relatives already in the medical field so they have they can easily like about their experience. There may be some variations from university to university.
