brand new workstation pc... dual quad xeon 2.0 ghz, 4 gigs ram, Asus server board, blah blah blah....

i have one 80 gig main drive and i want a RAID 1 system over my two 750 gig Audio drives. When installing a fresh copy of XP, do i still need to hit F6 and try and install the driver for the RAID not concerning my main drive, or can i just do that later on in windows?

No you can install the OS then reconfigure the drives into a RAID array afterward. Now if you want it to be a "hardware RAID" setup that reconfiguration will need to be done first in BIOS. This can even be done prior to installing the OS, though that means that the OS will not recognize that array before the proper drivers are installed (only makes a difference in how the drive letters are setup up - so if you know how to redo those assignments, there is no difference).
