If I buy shielded bulk cat6 cable do the keystone jacks for the faceplates need to be shielded as well? Is shielded all that necessary in the first place?

Stay away from shielded cable unless you have all the proper gear, and can bond the system properly. Improperly bonded or unbonded shielded cabling does the exact opposite of what you want: The shielding becomes a giant antenna for RF.
Normal UTP (unshielded Twisted Pair) cabling does a remarkable job of dealing with common sources of RF. There really is no need to use shielded CAT5 or CAT6 in the vast majority of installations.

AgentZap, SkyKing is exactly right. That said, if you do go shielded, my recollection is that you need to set the system up so that
ths ehields are connected together and then grounded on *one* end of the network. A very common and dangerous mistake is to ground *both* ends, which creates a ground loop and associated hazards and signal issues.
