Do green, yellow, and red bell peppers taste different or is it just aesthetic?

Got a recipe that calls for red bells, and they are like 2 bucks a piece and greens are 49 cents. .

A little, yeah. Not enough that you can't substitute.

According to Wikipedia:

"Green peppers are less sweet and slightly more bitter than red, yellow or orange peppers. The taste of ripe peppers can also vary with growing conditions and post-harvest storage treatment; the sweetest are fruit allowed to ripen fully on the plant in full sunshine, while fruit harvested green and after-ripened in storage are less sweet."

I'm sure there is an answer for this, but I can't figure out why the green less mature peppers are consistently bigger than their more mature brethren?

Reds are 10x better. Only slightly different but the sweetness makes all the difference. Greens are worthless, you might as well use canned green beans.

Give me red/yellow/orange pepper any day of the week. Yes, they are more expensive (I only get them when they're on sale tho), but with the greens I'm tasting them all day 'cause of the heartburn........blech!

They each have their own chemical makeup so they do provide different flavor profiles.

They taste different. Greens are nowhere near as sweet.

As am I. I'm still shocked they can both be in the same restaurant.

Very different taste among them. Raw or cooked the taste is different, but more on the cooked side. You're asking the difference between a jalapeno and a chili.

Yeah, Green have very little flavor, Red has the most. I tend to like Orange and Yellow the best as it seems to be the best compromise in terms of amount of flavor in addition to adding nice color to the food.

They're all good. Green are Bitter, the other colours are Sweet. I usually use the Others, but once in awhile I'll use Green for a flavour change. I eat a lot of Bell Peppers.

You know the only difference in color is how long they've been left to ripen? :)

That being said, I'll chime in and repeat what's already been said, the lighter the pepper, the sweeter it is.

You have got to be kidding me. Bell peppers are the base for all flavor. That's like saying onions and celery suck. Heck I have pepper sammiches - a little oil and vinegar, salt/pepper and big chunks of bell pepper. Or just grab one and eat it raw.
