It must be something from those heathens that use sugar when making it
No need to add sugar ... cornbread (to me at least) always has a slightly sweet taste by itself.
Also the actual sugar content of the corn variety used can have a significant effect on the sweetness of the resulting bread even with no other recipe changes. (Sweet corn can be nearly 20% sugar)
I will confess to slathering fresh raspberry preserves on warm toasted corn bread myself in the occasional fit of late-night munchies, but I eat so little sweet stuff these days that even "regular" processed food can taste overwhelmingly sweet or salty.
