She is running XP Pro and I'm running XP Pro. What settings does she have to do/update so that I can remote desktop/connect to her desktop and use some programs?

System Properties->remote->"Allow users to connect remotely to this computer" (configure that)

if she's behind a router she needs to forward 3389 OR put herself in the dmz OR just hook directly up to the modem for the time being.

Remote desktop will seem MUCH faster than VNC. You might want to configure a firewall to allow Remote Desktop connections ONLY between those two computers though. Really, this is a security precaution you should be taking anyway.
