How do I do this in the BIOS? I'm using the GA-P35C-DS3R and I can't seem to find it anywhere in the BIOS...am I looking in the wrong place or does it have a different name?

Advanced BIOS features -> CPU EIST Function (you'll probably want to disable C1E too).

Sweet...thanks a lot! This might be another dumb question, but how can I modify the timings on the RAM in the BIOS? I open CPU-Z and it reports my RAM as running 5-7-7-23...?

you need to press Ctrl+F1 at the menu selection to show the hidden advanced options, then goto M.I.T and scroll down.
