Disable any background activities?

I've a little, maybe "geek", problem with Windows Vista and Windows 7: I hate background activities on my HDDs. Someone can help me to understand how work "background" activities on Windows 7 and disable all services/activities/scheduled programs without break anything? 😀

I'm using my PC for gaming, lan (rarely) and web browsing. I don't want disable/block security resident programs for memory free, but only the activities, that sometime, starts when I'm away from keyboard for some minutes...

Antivir with any schedule disabled,
Q6600@3.0GHz,
4GB RAM DDR2,
2x160GB Seagate RAID 0,
nVidia 8800 GT.
