This is something that happens often. I open a new can of Grizzly Wintergreen and I am disappointed that it appears kind of dry and less moist than it should be. I grab a pinch anyway.
A few hours later, I open the can and its as moist as can be. Its almost like it sucked moisture out of the air. Why does this happen?

I'm just guessing, but I'd assume that the pack was sealed in low-humidity conditions which keeps it drier and makes it last longer. When you break the seal, you expose it to moisture in the air that it then absorbs, albeit over time.

How's the date? Sometimes snuff is a bit old and dry but it'll moisten up a tad after the seal is broken. Although prob not to the extent you're experiencing. I usually go with pouches and this does not occur with pouches. If it's dry it stays dry unless you add a few drops of water or whatever. Wintergreen is shit though man lol

It likely has glycerin, and aggressively pulls moisture from the air. Wintergreen? Yuk...
