Digital Coax With Logitech Z-680

Does anyway know what kind of digital coax cable i would need to hook my logitech z-680's to my audigy 2 ZS?

You'd need to get a mono 3.5mm to RCA adapter and then run an RCA cable to the z-680s.

Be aware that for gaming, you wont get surround sound through digital. You'll get stereo from sources that are not already DD or DTS encoded.
