Digital Camera Questions

My digital camera, a Casio EX-Z4U (one of the Exilims) has two options on it that I'm trying to understand. One is EV Shift which through my research has something to do with the exposure, and the other is ISO. From what I've read a higher ISO (my camera has auto, and then ISO 50-100) helps in low light, but increases the noise. I tested this and it seems to hold true. A lower ISO seems to help reduce the extra amount of white I get when using the flash.

Any help in explaining these is greatly appreciated. Thanks.

I don't know much about photography, so here's a bump. Hopefully someone else will chime in.

ISO: is the light sensitivity rating, origionally assigned to film and they translate it to digital, the lower the ISO the smaller the grain and the less sensitive to light, Higher ISO, more grain, more light sensitiive
you use a higher ISO in low light to get the correct exposure, without haveing to use a flash or shoot at too low of a shutter speed

EV Shift: is an exposure compinsation, usially used for braketing to under or over expose a picture beyone what the meter says is correct, because certian ares might become muddy or blown out
