digital camera gurus... couple beginner questions

"prefocusing... either set the aperture and focus manually to use the cameras "hyperfocal" point(s), or pre-focusing the camera to the approximate distance of your subjects (either manually, or by locking focus on something at a similar distance, and then recomposing."

I know what aperture and focusing is... but what exactly is "prefocusing"?
and what does this person mean by recomposing?

I own a canon digital camera... and trying to learn how to use it properly
 
If you use a canon... I know you can hold down the capture button half way to prefocus on your focus point then set up the photo and push completely down to take the picture. I'm no guru, but I have owned a Canon G3 and G5, and soon a G6.
