Diet HELP!

Can I fry eggplant and zucchini in some type of oil so that it isn't so dry? I tried baking it in a toaster oven last night and it was way TOO dry for me to even eat. Not to mention it tasted rather nasty.

What else type of vegetables would be good to eat with a steak?

I'm trying to substitue vegetables for rice.

I don't eat a lot of vegetables like beans and the like.

I'm mainly a eggplant, zucchini, celery, carrots, broccoli, salads, etc type of guy.

Also, is it normal for someone on the atkins diet to use butter to fry things such as onions and other vegetables?

Fruits, I think.

They are the seed carrying product of a plant. I think that makes them fruit.

Like steak, eggplant, and zucchini. No rice or potato.

Botanically, they are fruits. Eggplants are related to other Solanes (tomato, potato, peppers), and zucchini are a kind of squash.

Culinarily, they are veggies (for induction phase of Atkins, probably off limits, but for later, probably fine. Dedpuhl gave the figures.)

If you are doing Atkins, you should be counting carb grams.
Atkins.com has a carb counter that you can print out.
Use that to count carbs.
Although they may technically be fruits, they are pretty low in sugar carbs and are more like vegetables as far as nutrition goes.

Japanese Eggplants are more small and cylinderical....Zucchini not too much more bumpy than a cucumber I'd say.

Then again I have issues.

Yes, eat eggplant and zucchini with the steak. They have some carbs but Atkins is not about total carb abstinence, otherwise you could only eat meat (yuck!).

Other stuff you can eat with abandon: asparagus, green beans, cabbage, carrots, celery, onions, squash, tomatoes, sweet peppers, cucumbers, pumpkin, mushrooms, radishes, spinach...and that's the common stuff. Potatoes and corn are basically the "trouble" vegetables if you are on Atkins.
