You can turn off ("pause") tracking of various activities through the history.google.com settings, or at least make them invisible to you. Google probably maintains a copy.

Unfortunately, these controls sometimes fail. My YouTube viewing history is tracked even though the control is set to "paused." I can clear the history, but new views are always added to the list unless I view them through an anonymous browser window.

I thought it is disclosed when you turn the voice search on?

I do think Google settings should be more accessible and transparent. They are just too messy and confusing. A saving grace is that you can delete your account as well as that you can create sub-accounts and connected accounts.

I assume by now Google has developed some algorithm or another to figure out when I take a dump, never mind logging/holding onto stuff I actually send to their servers... There's a reason I've never used anything but their search engine (while fully aware they're keeping tags tabs on all my searches) and Google translate (and even the latter, 95% to translate websites, not original or uploaded text, maybe 5% to translate individual words and phrases.) Not to sound excessively paranoid, but I never was one was one to trust a business that thought they were kidding anyone with a slogan like: "Do No Evil" (and it almost goes without saying, that slogan quietly disappeared a long time ago...)

Great. Keep analysing it google! The more samples they have the more accurate the voice detection gets and the more obscure each of my recordings becomes in the huge pile of data.
