Don't know what a gas hob is, but if there is fuel, air, and a spark, it pretty much has to ignite. We can be pretty sure that there is air available, as you're able to ask the question. If the spark is indeed there, then the only other option is that you're not getting fuel. Trace that delivery system and you'll find your problem.

If it won't stay lit it could be a bad thermocoupler. That's basically a fancy term for a flame sensor. Might be worth checking out; most of the time they are easy to replace and relatively inexpensive.

usually no thermocouple on a gas cooktop / hob with electronic ignition. I find on mine, that the ground is not very good on the cover for the burner, or the ceramic insulator on the ignitier is dirty and drawing charge from the spark. i use a bit of sand paper or scotchbrite to clean the contact surfaces of the cover pieces so that they ground better, and I use it to clean the ceramic and the electrode on the ignitor when they wont lite.

can you actually see the spark, or are you just listening to the click?

wait, is it an oven or a hob. oven is an oven where you bake or grill ( British) or broil (American) . hob is a cooktop where you use a sauce pan or whatever.

Yeah I know how a cook top ignites but the OP linked to an oven. Maybe the OP is confused and didn't know what term to use? The link they provided led me to a built in oven not a cook top. Anyway, I'm not really sure if a modern oven even uses a thermocoupler but I'm sure they use something to make sure a flame is present otherwise the valve would stay open and unlit gas would fill the oven.
I'm certainly not an appliance repairman though so I was just "shooting from the hip" so to speak when suggesting a thermocoupler.

If the OP is uncertain on the correct term to use though perhaps it is best if they call an appliance repair place to come and take a look at it vs. trying to repair it themselves. Don't get me wrong I'm all for trying to repair stuff on my own especially if it's a simple fix but.....yeah....
