have you ever installed redhat 8,9, fedora? pop in 3 cds and you're done. Once installed, you go in to a nice gui desktop. It's just as easy to use as windows or os 9.x, 10.x. As for linux servers...yes we have some that we never touch! They run forever and they're free. All we paid was hardware.
It is hard to setup, but once you learn, it's actually easier to maintain. I, like you, wish there's better documentation. Until then, we're at the mercy of linux geeks
