So how long can I keep it in my refrigerator before it's not safe to eat?

lol.

That's what I'm hoping to avoid, is actually taste testing for safety.
Just looking for a ballpark figure. There's some ham in there that I'm eyeballing.

If it smells like bologna, but it's not bologna, it's time to throw it out.

Five to seven days from opening the package depending on fridge temp and amount of exposure to the air. Seven days is the MAX, the trash it.

For ham I'd say 5-8 days, depending on how new the package at the deli is. Ham starts to get slimy when it's going bad. Remember to squeeze all of the air out of the bag every time you put it back into the fridge

I see. This stuff is about to cross that line.

While we're at it, here's another question: I got a letter in the mail today. It told me that I am "pre-approved to apply for the Citibank card."

Preapproved. To apply for. Wtf?

Well, I've seen tons that simply say "You're pre-approved for ____ card." Which makes perfect sense.
But they're telling me I'm pre-approved to apply for it... if I have to apply for something, how does that make me pre-approved?

What I normally do with something like that is nuke it in the microwave until I hear it pop and sizzle. Make sure the meat is uniformly cooked. It's the heat that kills bacteria, not the microwaves.

Taste a tiny bit. If it doesn't taste normal then throw it out. Otherwise, I would eat it if it's not more than a week old.

If the meat dries out enough that you can take a slice of it and stab a man through the heart with it, it's probably best to toss it.

just cook it.. throw some herbs and little olive oil on a pan and cook it real good.. make a sandwhich out of it, it'll be ok if you do that. just cook it for a while.. sure its not the same ham taste, but this will make it safe and taste pretty damn good too

After careful consideration of all the information presented to me, I've decided to scramble some eggs and cook the ham with them. I think it'll work out.

i've heard that once you open it you shouldn't eat it after 2 weeks of it being open (regardless of the sell by date)....is that true???

Exactly. The slimy part is a big give away. And just take a smell before you eat it. If the label says turkey but it smells like feces, it's probably past its prime.

turkey, at least sliced turkey from a deli seems to go bad pretty quickly. i've been buying the pre-sliced meats in the plastic packages lately and it seems to last a lot longer. I'd say it even tastes better too.

Smell it, look at it, when in doubt, taste it. If you REALLY want to be sure, (re)cook it.
