Deleted documents and downloads folder now they keep confusing themselves for each ot

No backups, no system restore, nothing of the sort. No data to worry about either. But the folders were being annoying confusing themselves for each other, my downloads shortcuts were renamed to documents and pointed to the documents directory but the icon still looked like the downloads icon. Read that carefully, windows has gone nuts. So I deleted the two folders in attempts to fix this problem but it's still happening.

Windows has gone nuts, or do you got malware causing windows to go nuts?

I would clean install the OS.

It's a fresh install of Windows, it's W10 it's always been a bit nutty. Plus I have Bitdefender and Malwarebyes both claiming the system is clean.

Either a bad ISO of Windows, or data corruption taking place on the drive on in RAM. I would start with running system file checker, then and if that doesn't work get a fresh ISO and do a clean install.
