At the moment I would say:

Neko Case - Fox Confessor Brings the Flood
Tom Waits - Real Gone
Ratatat - Nine Beats

All 3 of these artists have phenomenal catalogs, especially Waits, so it was hard to pick but I would guess those 3 albums I listen to the most right now. I have been on a Modest Mouse kick, but IMO their greats are spread over their entire discography, no one album really stands out.

Duran Duran - Arena
Casiopea - Perfect Live II
Chick Corea Akoustic Band - Akoustic Band

It's really tough to do just three. If I can add just one more:
The Hunchback of Notre Dame: An Original Walt Disney Records Soundtrack :)

My favorite thing about this thread; there's very few albums listed so far that I don't like. Most of you have pretty good taste. Some of you.... not so much.

Also, it took me a couple days to notice that the OP asked people to "definite" their taste, not define their taste. My grammar Nazi skills are slipping.

I actually just noticed the "definite" now, and was thinking I completely didn't see that any of the previous days...

hmm, problem with albums is I might love one song and the rest are crap.

But here goes anyway (I'll put a particular song in parenthesis)

Rolling Stones - Let It Bleed (Gimme Shelter)
The Kinks - Sunny Afternoon (I'm Not Like Everybody Else & Sunny Afternoon)
The Doors - Waiting for the Sun (Spanish Caravan & Waiting For the Sun)
