Wish You Were Here - Pink Floyd
American Idiot - Green Day
The Marshall Mathers LP - Eminem

This is leaving out a ton of shit that I listen to.
Three albums isn't enough to describe my musical tastes by a long shot.

Sigur Rós - Takk

In no particular order,

1. Everything Ever Released - Roy Orbison
2. Machine Head - Deep Purple
3. The Four Seasons - Vivaldi

It's really impossible to limit it to 3 albums or even 3 genres. I'd also have to mention some of the blues greats.
Janis Joplin
Muddy Waters
Howlin' Wolf
All the great bands that defy pigeon holing,
Moody Blues
The Chieftains
Tangerine Dream

Yanni - Live at the Acropolis
Lana Del Rey - Born to Die
Within Temptation - The Unforgiving

This is hard. 3 albums is not enough, my tastes are way broader (classical and orchestral, new age, some rap, alternative rock, classic rock, pop from all decades, jazz, christian hymns, world music, etc.)

I own over 1,000 CDs so picking even 3 artists would be a struggle, with so many left out. But I'll try:

Richard Thompson - Amnesia
Tori Amos - To Venus and Back (cheating since disc 2 is a live CD)
Tom Waits - Rain Dogs

But that leaves out Elvis Costello, Heather Nova, Oingo Boingo, Chris Whitley, as well as classical, Celtic, blues and jazz. Nope, 3 just doesn't cover it.

Only 3 makes it impossible. But...

Queen - A Night at the Opera
Alice in Chains - Dirt
Jethro Tull - TaaB

That's fine, we can probably still have a nice dinner, drink a good whisky, and angrily smash some records.

Actually, that sounds like a nice evening. You in?

Works for me! Let's invite Fritzo so I've got support for my kind o' music.
