DDR333 memory issues

I've just purchased and installed an Asus A7V333 board as an upgrade to a Shuttle KT266a-based board. As I had memory - Mushkin PC2100 2-3-3 - and a CPU - Athlon XP 1800+ - from that system, I've not been rushed to buy those items and have had time to do some research. I certainly planned on moving to PC2700, but have been finding some disturbing info out there. Fisrt of all, no one seems to have a PC2700 with 2-2-2 timings. Mushkin unofficially tells me that their "Level 2" PC2100 will go to DDR333 easily (and beyond), but I'd feel better if they officially marketed it that way. The second issue is that some memory makers are saying that using more than one stick of RAM will cause problems.

This is shocking! Along with gaming, I also do PhotoShop work on large files and have become accustomed to 1024MB of memory. And the PC2700 timing issue sucks as well. I've read that DDR333 only outperforms DDR266 at 2-2-2 timings. Has anybody run into these issues and/or have any further info?
