I'm looking at getting a 1GB kit of DDR 3200, but notice prices vary quite a bit. Is there really that much of a performance difference between the value ram and something like hyperx? I've been leaning towards the hyperx, but just wanted another opinion.

Well, you need to give us more info first off.

IAlot of people will recommend buffalo and Geil

Personally I think this stuff is utter crap.

My basic rule of thumb is:

If you need it to run at stock speeds get crucial

If you are overclocking the RAM then get Corsair

I dont mess with the trendy fad crap like geil and bufallo. It's not worth it.

I running a P4 3.0Ghz with 800FSB on an intel D865GBF board. I'll be using it for some gaming, but mainly video editing.

Buffalo isn't crap, it's basically naked Corsair (no heatspreaders). Same Winbond chips, high quality PCB, and it's about $90 for a 512MB stick. Buffalo is WELL worth the money.

Well Value Ram sucks. You need at least some good-at-stock stuff like Crucial. The more expensive stuff like Corsair XMS LL will run at lower latencies, boosting speeds by a small tad.

Geil ram has been shown to be a good match up with the 800 fsb pentium 4's.

That is my suggestion.

am I gonna have any problems stability becaue of the voltage on any of these (geil, buffalo, corsair). I know the board says it will run 2.6v only, while most of these have ranges of 2.6-3.1 or so.

My Buffalo PC3200 runs 2.6V default. The board almost definately has settings to bump it up to 2.8V.
