The only difference between the two is what "official" speed they can run at. PC2100 is for 133 MHz FSB and PC2700 is 166 MHz (IIRC).

If your CPU is only going to run at 133 MHz FSB, there will be no difference between the two different DDR chips.
 
motoamd is right, if you're running a 133FSB, there won't be any performance difference but -

a) if you can run the CPU and memory asyncronously - don't know if this can be done anymore with current chipsets, though I believe the vernerable BX could - you may see a performance increase and

b)buying the faster memory may still be a good idea, even if it doesn't provide immediate benefit. Rumor has it that AMD will be going to a 166MHz bus for upcoming Athlons, in which case you'll need DDR 2700. Intel likes to push the FSB on P4s up every once in a while, too. As far as the Hammer goes, I don't think anybody knows, but faster than 133 would still be a good bet, IMO.

This is just my .02; the choice is entirely up to you. You will pay a premium for the faster memory, which is a downside.
