Data from one drive to another

Is there a way to take the data from one hard drive and put it on another and then boot off of the new drive? I just got a 40 gig and want to take the data from my 20 to my 40. What program(s) can I use to do that?

PS: Maxtor sent me a replacement drive for my 20 gig and sent me a 40 gig instead.
