Try bringing in a gallon of filtered water when you make the next pot. See if this improves the taste. Maybe, the water source at work needs to get filtered to make better coffee. If you have a coffee service, maybe, you can switch to another flavor/blend of coffee. Most companies have many selections to choose from - even Starbucks, if you're willing to pay the premium.

This is government, we don't have no coffee service!

We do have one of those standalone water filtering things. It's got to be the coffee. It's just a big 5 pound tub of cheap Maxwell House that sits out at room temperature forever. But somedays it doesn't taste so much like hot dogs. I haven't figured out the trick to it yet.
