Just went there for spring break this year. It was totally dead, as they say tourism picks up around May. Excellent place, though.
I recommend renting bikes, or a car if you're less ambitious. For like $30, you can travel the entire island in a day. Well worth it.
Make sure you go to Santo Wines - just about all Santorini wine comes from them.
Also, definitely go to a restaurant called Naoussa. It's right in the middle of the main city, Thira. The place is all family-run, the head guy does most of the cooking along with his mother. He was so nice to us, he even packed us some free sandwiches for the ferry ride back home. We ate there every day we were on the island (also because most everything else was closed).
