Cuts of beef

Anyone know what a Beef Flat Iron Griller is? Is it a decent cut of beef? How much does it typically cost?

Q:
What is the "flat iron griller?"
A: The flat iron griller, also called top blade steak, is a "new cut" of steaks from beef shoulder top blade. In the past, we consumed the meat from the beef shoulder as chuck steak and roasts. The flat iron griller is the second tenderest cut of beef after the filet mignon.

Order form for the employee meat purchase program.

Not sure how much they cost retail since I am getting them at near cost.

Wonder when they will be available in krogers and wal-mart? Yes I buy meat at wal-mart..They have a better selection than krogers...

Now I am hungry just thinking about it. 😉

This may be a Tyson-only kinda deal, since I found the question/answer thing on their webpage and since you work for them =) I'll try to call a couple butchers when I get a break here at work in a couple minutes and ask around.

I live in Nebraska - so beef is a big thing in the news. The flat iron was invented (in Nebraska if I recall correctly) just a couple years back. As stated above, they found a tender region that was used in other meat cuts (and often even tossed in the ground beef pile with other low-cost meats). I've only eaten it once and I'd say it is very similar to the filet mignon. I agree that it is the second most tender beef I've had. But like the filet mignon and other tender meats, it has a much more subtle taste (ie less taste). I would order it again if I wanted a tender piece of steak.
