croutons...Does any one have a recipe?

Hi,

No joke. Does any one make their own croutons on a regular basis? How do you do it?

Also, hard-boiled eggs. Put eggs in a heavy pot. Bring water to a near boil at the highest heat. Turn off heat, cover and let sit for 10 minutes. But how do I shell them? Half the time the damn things stick to the inside of the shell. Is there a fool-proof trick to removing the shells of hard-boiled eggs?

yeah cool off your eggs in cold water first. then crack once and roll on the counter, so the shell breaks up. then tear the inner lining that holds the cumbled shell together and peel off with your thumb.

you can make really good croutons with Eggo frozen waffles. just cut out the little squares.

As has been mentioned, cool the eggs after cooking. However, eggs peel better when still warm rather than completely cold. Older eggs also peel better.

The best croutons are made from decent bread. The bread should have body and a good crust. Stale bread does indeed make better croutons. You need some kind of fat like butter, olive oil or, bacon fat as well as your herb of choice. They should also be seasoned with salt and pepper. Just saute them in a pan and use warm.

You can use any bread, or if you have a bread maker, make your own. I then cut it up into 1/2 inch squares or so and lay them on a cookie sheet or oven pan. I then put some italian seasoning and parmesian cheese on them and stick them in the oven on the "warm" or 150 degree setting for about 2-3 hours, with the oven left slightly open at the top (stick balled up alluminum foil in the door to keep it slightly open). They are done when they are nice and crunchy.

Eggs:
Start with cold water, add eggs and salt (never measured, but probably a tbsp or so). Bring to a boil. Once boiling I tap the eggs with a sharp knife to slightly crack the shell. Turn off heat, cover and let sit for 15min. Rinse over cold water and then peel.

I find I have >90% of success with the shell pealing off effortlessly following this method.
