I think it can however the XT may be scaled back down to Pro speeds to run in Crossfire. Alternatively you can flash the Pro's BIOS to an XT Bios and there will be no problems (all Pro's I have seen on various forums have been able to reach XT stock speeds).

I have read that a lot of people have flashed the Pro to the XT speeds...

Does anyone else see any potential problems / issues in getting these 2 to work together?...

Beside voiding your warranty? Nope, shouldn't be any problems. Other than the usual endless bugs and odd little malfunctions that always come with xfire/sli.

no void of any warranties unless you flash the Pro BIOS :p

Apoppin, to the best of your knowledge, can you Crossfire an XT with a Pro?
