Cpu upgrade from XP2700???

If you want to hang on to the 6800 you'll need a AGP mobo like an nforce 3. The nForce 4 will mean you'll have to move to PCI-E which copuld be costly and maybe not worth it.
 
I would go with the ASRock motherboard that has both an AGP & PCI-e slot. You could buy that and still use your current video card, but it would allow you to upgrade to PCI-e later and give you a Socket 939 instead of 754. You can look through some of the 369 reviews at Newegg and read this review here at AT.

As far as a processor goes, the Venice 3000 is going for $130 right now, which would put you at about $200 according to AT's RTPE. That would be quite at upgrade from what you have now. If you wanted to go dual-core, both the Opteron 165 and the X2-3800 are around $320-330 right now, but this wouldn't be much of a performance boost for gaming unless you're running a lot in the background.
 
I would go 64-bit with a socket 939. I like the idea kalrith had with being able to use your old agp card instead of upgrading to pci-e right away. Pci-e is the way of the future as is 64-bit processors.
