I'm going to buy a PC soon, on the site where I'm putting it together it says the P8P67 EVO's standard memory speeds go up to 1600MHz. It ALSO says the speed is determined by the memory controller in the processor, however the i7 2600k's highest memory speed is 1333MHz.

My questions are: is it useless then to get higher than 1333MHz if you're not OCing? What memory do most people have? And if you're just gaming will you need anything more than 8 gigs?

you should be able to set the speed to 1600 in the bios, at least that the way it is on my x58. just be sure to set your timings to what your ram needs.

you don't really need 8gig for gaming, it's nice for multitasking.

You may see some slight improvement with higher speeds in benchmarks, but most like nothing you can tell.
