Can't believe it took me over 30 years to have couscous for the first time but now I'm addicted to it. Anyone here really like it and if so, do you have any good variations or things you add to it? I added some diced Kalamata olives, fresh garlic and olive oil to some last night that was pretty good.

It's a fun alternative to rice. It's a light, fluffy texture that takes well to seasoning/sauces.
 
I love couscous. One of my favorites is cold couscous salad. Great to make if you have leftover plain couscous from dinner. Basically just couscous with salt & pepper, olive oil, a splash of orange juice, dried cranberries, golden raisins, garlic, diced red and yellow peppers and sliced green onion.

PS try Israeli couscous sometime, it's not really couscous, but still good.

I enjoy risotto as well but I haven't cooked any meat with my couscous. I normally just make it out of the box as a side item but I do tend to add a few spices/ingredients to the couscous to enhance it. I'll have to learn some new ways to prepare it. I eat a TON of brown rice, which I love, but it's nice having an alternative every once in a while.

Damn, that sounds good. I'll have to try that. The one with the feta sounds good as well but I'm not a big tomato fan so maybe I can swap those out for something else.

I spent 18 months in Morocco and ate it a lot. It's delicious.
