Could someone explain the dual monitor/ SLI situation to me?

I have two monitors and one video card right now. I use one monitor for gaming, and the other when I am editing documents.

I want to keep two monitors. I do *not* want to game on both, just one.

Can I do that when I get my SLI rig set up (two 8800GT cards) ?

Sure but you will have to disable SLI when your not gaming. So far SLI doesn't support the use of more then 1 monitor. So you'll have to go into the display properties each time to switch SLI on and off which i beleive requires you to restart the system. Allot of work for nothing if you ask me.
