Could it work

Are you looking to combine two WAN links (internet connections), or use two LAN ports over your local LAN, to your switch or router connected to your WAN connection?

You can do both, but they are different things.

For example I would buy a double nic or single one and a switch plug two cat6 cables to it on bonding them together would that work

Look up "link aggregation", "bonding", and "multiple WAN router". Then perhaps you'll be able to describe what you're really looking for.

Are you currently experiencing any bottlenecks, with either your LAN, or your WAN? If you don't already have a gigabit LAN, then you should upgrade. If you already have gigabit, and have a server or NAS on your LAN (or run iSCSI protocol), then you could consider buying a switch that supports LAGG or "teaming", and then get a dual-port NIC for the PC. But that's not going to increase your WAN bandwidth at all.

And if you're gaming, the teaming feature is going to probably add some latency to your connecting, which would be undesirable.

You don't need 8 lanes either on local roads or on highways if there is only one car.

More lanes do not make your car run faster.

If you don't have any idea about what you are talking about, you don't need it. It's waste of time and money.
