Costco Chicken Breasts

i wanna make some chicken tonight, anyone have suggestions as to what to put on it and how to cook it...i dont want bland-ass chicken

last time i put Parmesan cheese, garlic salt, and some pepper on it with a few drops of hotsauce. it ended up tasting like teriyaki chicken

It's probably too late for this if you want to cook tonight, but marinate it in italian dressing.

Which Costco breasts did you buy, fresh or frozen?

We buy the Kirkland/Foster Farms fresh skinless/boneless breasts and they're fucking great. Possibly the best quality chicken we've ever bought.
She uses it in all her chicken recipes; BBQ, Teriyaki, baked with Panko crust, chopped in her chicken pasta caserole...

I don't see how the hell that list of ingredients you listed above could taste anything close to Teriyaki...

I usually marinade in water / 1/2 cup apple cider vinegar/ salt & pepper to taste / 2 cloves garlic / 1 table spoon ex virgin o oil/ 1 tspn each basil & oregano
in a zip lock bag for minimum 15 minutes but i like to do 1 hour

This is also a great marinade

1 cup olive oil
1/4 cup chopped fresh parsley
1 lemon, juiced
2 tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper

works great for shrimp also.

grilling is a must

brine it. i always brine chicken pieces

~4C cool, or lukewarm water
1/4C sugar
1/4C salt

mix to dissolve. add chicken (good for shrimp, or pork as well) and let soak for ~20 minutes

i dont care how you cook it after that, but dont use anymore salt when you season, and itll be damn tender and juicy

bake it, fry it, grill it, whatever.

poor man parmesan

a little olive oil in the bottom of pan
drop in the birds
a little salt and pepper on top
throw a bottle of decent spagetti sauce ( i like bertolli with olives) on top
cook at 350 for about 35 mins
throw some mozzerella and parmagiana on top
cook for another 30 minutes...

cook up a little pasta to sop up with

this is with thawed bird...

It's a famous thing at the Jersey shore (supposedly) to dip it in egg and instead of bread crumbs use crushed captain crunch, then bake. I've been dying to try it. I also considered that if captain crunch was commonly accepted, why not doritos?

Ok

Take 3 teaspoons cajun seasoning - sprinkle over breasts. Place in glass baking dish that has been sprayed with release. Now get 1.25 cups of rice (white only), 1 can of chicken broth, 1 can of cream of chicken soup, and about a tablespoon of tabasco sauce. Mix well in bowl. Pour this over the breasts. Cover with foil - bake 1 hour - sprinkle w/ 3/4 cup of fav cheese. . . (I like provolone on this shredded). . .

In a casserole pan, cover chicken breasts with 1-2 jars of sauerkraut (w/juice) and then cover with 1000 Island dressing.

Cover and bake for 45min-hour. The vinegar in the sauerkraut tenderizes the chicken like you won't believe.

It looks a bit odd, but it's absolutely delicious. Probably one of my favorite chicken recipes.

Sounds good, sounds like braising.

But really, if your chicken breasts are bland you're probably just overcooking it. Chicken breast by itself with nothing but salt and pepper, maybe garlic should have tons of flavor...unless you cook it too high heat or too long. That or you don't have any fat to flavor it.

*shakes fist at super lean breasts*

1) pound chiken breast to get more thin/even
2) butter/oil in skillet on med to med-hi heat, brown breasts, take off heat
3) do whatever you want from there

Or cheat and do shake and bake, don't laugh...it's nice for a quickie but pound them first so they aren't so thick. Just flatten them out a bit, not pound the breast into milky oblivion.

Here is what I do (very quick prep):

thaw and cut each breast into about 2-3 parts.

Get a cereal bowl and fill it with about 3/4 cup of oil.
pour in red pepper flakes, chicken seasoning, italian flake seasoning, garlic powder, and any other spices that sound good.
mix up and put the chicken parts in. If you have time, marinate for an hour.
pan fry for about 3-4 min, flip and put garlic butter on it, pan fry for an additional 3-4 min until done.

pull off onto plate and cover in garlic butter


your mouth will start to gag at how good it is.

edit: I made this tonight with costco chicken.

Last few times I cooked Costco chicken breasts:

1. Marinated chicken in a baggies with soy sauce, red pepper, black pepper, garlic powder, onion powder for an hour or so. Baked with french-fry-cut potatoes at about 350 degrees for 20 minutes or so until done.

2. Sliced chicken into bites, began to cook in wok with a little water, red pepper, and black pepper. Sliced onions, bell peppers, and jalapenos. When chicken was mostly cooked, added vegetables and cooked all together until chicken was done. Served with tortillas and refried beans.

3. Semi-baked two chicken breasts for a while. Made up a batch of Bisquik biscuit dough, and made four big flat patties. Removed chicken and placed on a pattie, added some pepper jack cheese and other spices, then covered with remaining biscuit patties, closed up the edges, and baked all together for 15 minutes at 425 degrees. I could only finish about half of one of these monsters in one sitting.

I'm not much of a cook, but this week I tried it a few times since teh wom0n was getting home late and I didn't want her to cook. All were successes, IMHO.
