Corned beef: the neglected meat

I'm sitting here enjoying a delicious sandwich of corned beef with some glaze left over from our saint patricks day dinner and go to thinking, why don't we have it more often. In my house, we buy a corned beef one time during the year, why not more often? Do any of you include them as a more common meat? I think when I move out I'll have to buy one now and then as its really quite tasty.

I love corned beef. My mom never buys it cause she says its so expensive. The stuff from the Jewish delis around here is incredible.

I like it when it's very, very lean, but that's when it costs a ton.

i am not irish and i love it, w/some nice cabbage and potatoes, forgetaboutit
someone just told me that corned beef isn't even am irish dish. it is american?

Corned Beef to me has to be eaten right. First the corned beef cannot be to lean. It must have a layer of fat within. Also, the rye bread must be thick and fresh. The mustard must be Frenches and then you must microwave for about 30 seconds on high after it is complete. Makes a great lunch!
