I'd guess it has something to do with wanting something savory to go with the sweet tea and main...plus there would naturally be a dessert and sweet cornbread tastes like dessert (not necessarily a bad thing).

Professional Chef in Memphis Tennessee chiming in. Southern cornbread IS sweet. Honey sweet. Also great with chopped jalapeno & cheddar, still sweet, though.

edit, I am from the Midwest, so I may be biased.
